2 tablespoons wild rice
2/3 cup coarsely chopped green bell pepper

2/3 cup cut fresh string beans or 2/3 cup frozen string , be
2/3 cup fresh corn or 2/3 cup frozen corn
3/4 cup tomato sauce
1 1/2 cups long-grain white rice , well rinsed and drained
2 2/3 cups water
4 -5 sprigs fresh thyme , with leaves stripped from stems ( or 1 tsp . dried )
2 teaspoons salt
1/2 teaspoon black pepper

Instructions

1.In a large pot, heat the oil over medium heat and add the garlic, onion, and celery. Sauté until the onions are translucent, about 5 minutes.
2.Add the wild rice, bell peppers, string beans, and corn. Stir until the vegetables are slightly softened, about 5 minutes.
3.Pour in the tomato sauce and add the long-grain white rice. Stir until well combined.
4.Add the water, thyme leaves, salt, and black pepper. Stir to combine and bring to a boil over high heat.
5.Reduce the heat to low, cover with a tight-fitting lid, and simmer until the liquid is absorbed and the rice is tender, about 20-25 minutes.
6.When the rice is done, remove the pot from the heat and let the rice rest for 10 minutes before serving.
