Ingredients

1/2 teaspoon oregano
salt and pepper
12 corn tortillas
3 lbs chicken , cooked and cut into small pieces
monterey jack cheese , sliced
3/4 cup sour cream
1 - 1 1/2 cup grated monterey jack cheese
Arriba Enchiladas are a classic Mexican dish that has made its way to dinner tables all over the world. Instructions

1.Preheat your oven to 350°F.
2.In a medium saucepan, whisk together the chicken broth and flour until smooth.
3.Add the salsa, green chilies, chopped onion, garlic, sugar, cumin, basil, oregano, salt and pepper to the saucepan and stir well to combine.
4.Cook the mixture over medium heat, stirring constantly, until it comes to a boil. Reduce the heat to low and simmer for 5 minutes, stirring occasionally.
5.Dip each corn tortilla into the sauce mixture and fill with the cooked chicken pieces and sliced Monterey Jack cheese. Roll up the tortilla and place it seam-side-down in a 9 x 13-inch baking dish. Repeat with the remaining tortillas and chicken mixture until all the enchiladas are filled and rolled.
6.Pour the remaining sauce over the enchiladas and sprinkle the grated Monterey Jack cheese on top.
7.Bake the enchiladas for 20-25 minutes or until the cheese is melted and bubbly.
8.Serve hot with a dollop of sour cream on top.
