Ingredients

1 lb winter squash ( such as hubbard , acorn , delicata , spaghetti , etc . )
1 -2 teaspoon Mexican seasoning , mix to taste ( see my Mexican Seasoning Mix II ( Salt Free ) )
1 -2 teaspoon mexican mixed spice , to taste ( see my Sweet Mexican Spice Seasoning Mix )
honey ( or piloncillo )
butter
olive oil
salt
Winter squash has a hard and inedible skin, but once it’s cooked, the skin becomes soft and edible. This dish combines the natural sweetness of winter squash with traditional Mexican spices to produce a delicious and healthy meal. The buttery squash, which is high in fiber and rich in antioxidants, is drizzled with honey or piloncillo to give it a sweet caramelization. The mixture of Mexican seasoning blend and spice gives the dish a smoky and savory taste that complements the sweetness of the squash perfectly.

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Generously rub the inside of the squash with butter, then salt generously.
3.Put Mexican seasoning mix inside squash and drizzle honey or piloncillo over squash.
4.Sprinkle Mexican mixed spice inside squash.
5.Drizzle olive oil over the squash.
6.Cover with aluminum foil and bake until squash is tender, about 1 hour.
7.Uncover and continue baking until caramelized, about 20 more minutes.
