Ingredients

1 garlic clove , finely chopped
3 cups cooked long-grain rice
1/2 teaspoon salt
2 tablespoons sesame oil

100 g green beans , cut into thin diagonal slices

1 cup bean sprouts
140 g bamboo shoots , sliced

1 green capsicum , sliced
1/4 cup clear vegetable stock
2 tablespoons soy sauce
1/2 teaspoon salt
1 tablespoon coriander leaves , for garnish

Instructions

1.Heat peanut oil in a wok or a large frying pan.
2.Add finely chopped garlic and fry until light golden brown.
3.Add cooked rice and salt. Use a wooden spatula to break up the rice and mix until well combined.
4.In another pan, heat sesame oil and peanut oil.
5.Add grated garlic, grated ginger and fry until fragrant.
6.Add celery, green beans, grated carrot, bean sprouts, sliced bamboo shoots, sliced green capsicum and finely chopped spring onions. Fry for 1 minute.
7.Add clear vegetable stock, soy sauce and salt. Mix well.
8.Add fried rice to the vegetable mixture. Mix until well combined and fry for 2 minutes.
9.Garnish with coriander leaves and serve hot or cold.
