Ingredients

1 1/2 cups lentils
1 cup onion , chopped
2 large garlic cloves , crushed
1 quart water
1 cup bulgur
1/4 cup fresh parsley , chopped
2 tablespoons oil
1 3/4 teaspoons salt
1 teaspoon paprika
1/4 teaspoon pepper
1 cup fresh parsley , minced
1 cup green onion , with tops minced
Armenian lentil patties, known as Mercimek Köftesi in Turkey, are a traditional dish that can be served as a vegetarian entree or as a snack. The patties are typically served cold or at room temperature with a dipping sauce, such as hummus or yogurt sauce. Instructions

1.Rinse the lentils with cold water.
2.In a large pot, add the lentils, onion, garlic and water and bring to boil.
3.Reduce heat and simmer for 35 minutes.
4.Meanwhile, in a small bowl mix the bulgur with 1/2 cup of hot water and let simmer.
5.Once the lentils are cooked, let cool and then mash half of the lentils and leave the other half whole.
6.Mix the mashed lentils, bulgur, parsley, oil, salt, paprika, and pepper together.
7.Add the whole lentils, the minced parsley, and the green onion and mix well.
8.Create small patties and fry them in a pan over medium heat until golden brown on both sides.
