1/4 cup bagged granulated salt
3 tablespoons chaimen
2 tablespoons paprika
1/2 teaspoon red pepper ( optional )
1/2 teaspoon salt
1/2 tablespoon black pepper
1/2 tablespoon kimion ( cumin )
1/2 teaspoon allspice
3 -4 garlic cloves , crushed
1 cup water
Armenian Basterma is a traditional Armenian dish made by curing a beef slice with a mixture of salt, spices, and garlic. Instructions

1.In a small bowl, combine the bagged granulated salt, chaimen, paprika, red pepper, salt, black pepper, kimion, allspice, and crushed garlic, forming a paste-like texture.
2.Apply a thin layer of the paste to both sides of the beef slice, making sure to rub the mixture evenly into the meat.
3.Place the beef in a resealable bag and add 1 cup of water.
4.Seal the bag, removing any air, and refrigerate for 4-5 days, turning the bag daily to redistribute the mixture.
5.After 4-5 days, remove the beef from the bag and rinse it thoroughly.
6.Pat the beef dry with a paper towel and let it rest for at least 1 hour.
7.Once the beef has rested, serve it thinly sliced.
8.Note: Armenian Basterma can be stored in the refrigerator for up to 2-3 weeks.
