Ingredients

4 lbs pork shoulder or 4 lbs chicken , in approx . 2 . 5-inch by 2 . 5-inch pieces
1 can hominy
3 ancho chilies , seeded and cleaned
3 guajillo chilies , seeded and cleaned
4 -6 pieces garlic , slivers
finely ground black pepper
salt
1 head cabbage , shredded
radish , chopped
1/2 white onion , chopped
fresh cilantro , chopped
lime , quartered
red chili pepper flakes
oregano
Pozole is a traditional Mexican soup that has been enjoyed for centuries. It is often eaten during celebrations and special occasions, as it is considered a festive dish. Instructions

1.In a large pot, add in the pork shoulder or chicken pieces and enough water to cover them by about an inch. Bring to a boil and then reduce heat to a simmer, skimming off any foam that rises to the surface.
2.In a separate pot, bring the ancho and guajillo chilies to a boil in enough water to cover them. Reduce heat and allow to simmer for about 10 minutes or until the chilies have rehydrated.
3.Remove the chilies from the water and transfer them to a blender along with the garlic and a cup of the chili water. Blend until smooth.
4.Add the chili mixture to the pot with the pork or chicken, as well as the hominy, salt, and black pepper. Allow to simmer for about an hour or until the meat is tender and fully cooked.
5.Serve the pozole hot, topped with shredded cabbage, chopped onion, radish, cilantro, and a sprinkle of chili pepper flakes and oregano. Squeeze some fresh lime juice on top to add acidity to the soup.
