Ingredients

2 cups all-purpose flour
1 -2 teaspoon salt
3/4 cup cold margarine or 3/4 cup butter , cut into small cubes
2 eggs
2/3 cup cold water
2 tablespoons white vinegar
1 lb ground beef ( or turkey or chicken for a lower-fat variation )
4 hard-boiled eggs
1 cup stuffed green olive
handful raisins ( optional . This is supposedly a common ingredient , but I have never used them )
1 large onion
3 garlic cloves
2 -3 tablespoons ground cumin powder
1 teaspoon chili pepper flakes
salt and pepper

Instructions

1.In a large bowl, mix flour and salt together. Cut in butter/margarine until mixture resembles coarse crumbs.
2.In another bowl, beat together eggs, water, and vinegar. Slowly add to flour mixture and mix until evenly moistened.
3.Knead dough lightly and form into a ball. Cover with plastic wrap and chill for at least 30 minutes.
4.In a skillet, cook ground meat over medium-high heat until no longer pink. Drain any excess fat and add chopped onion and garlic. Continue cooking until onion is soft.
5.Stir in cumin, chili pepper flakes, salt, pepper, and raisins (if using). Cook for an additional 5 minutes.
6.Remove from heat and stir in chopped hard-boiled eggs and sliced olives. Let cool.
7.Roll out dough on a lightly floured surface to about 1/8 inch thickness. Cut circles using a biscuit cutter or drinking glass.
8.Fill each circle with meat mixture and fold over to form a crescent. Use a fork to press along the edges and seal well.
9.Preheat oven to 375°F. Place empanadas on a baking sheet lined with parchment paper.
10.Bake for 20-25 minutes, or until golden brown. Serve hot.
