Ingredients

1 cup rice
4 cups boiling water , salted
1/4 lb chopped beef
2 chicken livers
2 tablespoons olive oil
1 clove garlic
1/2 small onion , mnced
1/4 lb mushroom , sliced
2 tablespoons tomato paste
1 cup water
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup butter
3 tablespoons grated parmesan cheese or 3 tablespoons romano cheese
2 egg yolks
1 egg , lightly beaten
1 cup breadcrumbs
1 cup olive oil

Instructions

1.Rinse the rice in a fine mesh strainer under cold water.
2.In a large pot, bring 4 cups of salted water to a boil. Add the rice and stir. Reduce heat to low and cook the rice for about 20 minutes.
3.In a pan, add olive oil, garlic, onion and saute for a few mins or until the onions are translucent.
4.Add chopped beef and saute until cooked. Add tomato paste, water, salt, pepper, and sliced mushrooms, and cook until the mixture thickens a little bit.
5.Add the beef and mushroom mixture to the rice pot, and mix well. Let cool.
6.Once cooled, add 2 egg yolks, grated parmesan cheese, salt, pepper, and mix well.
7.To form the balls, take a small handful of rice and shape it into a ball. Make a hole in the center of the ball, and add 1 chicken liver in the center and close up the ball again.
8.Dip the balls first into the egg mixture and then into the breadcrumbs. Ensure that the balls are well coated.
9.Heat the olive oil in a large frying pan and deep fry the balls until golden brown. Remove and drain excess oil on a paper towel.
10.Serve as is with a sprinkle of grated cheese or with a side of sauce.
