Instructions

1.Bring the chicken broth to a simmer in a large pot.

7.Repeat this process, adding 1 cup of chicken broth at a time until the rice is tender and creamy.
8.Stir in the Parmesan cheese and cubed fontina cheese.
9.Allow the mixture to cool and then shape into 2-inch balls.
10.Roll each ball in bread crumbs to coat.
11.Heat the olive oil in a deep pot until it reaches 350°F.
12.Fry the arancini a few at a time, turning occasionally, until golden brown and crispy.
13.Drain on paper towels and serve hot.
