2 large eggs , beaten to blend
2 cups cooked rice , cooled
1/2 cup grated parmesan cheese
1 1/2 cups dried Italian seasoned breadcrumbs
2 ounces mozzarella cheese , cut into 1/2-inch cubes

Instructions

1.Preheat the oil in a deep-fryer or heavy skillet to 350 degrees F (175 degrees C).

3.Form the rice mixture into golf ball-sized balls, then make a hole in the center of each ball and insert a cube of mozzarella cheese. Press the rice back around the cheese, making sure it is completely covered.
4.Roll the balls in the breadcrumbs until completely coated.
5.Fry the balls in the hot oil until golden brown on all sides, about 4 minutes. Drain on paper towels and sprinkle with salt.
