Ingredients

1 1/2 cups rice
1 teaspoon saffron
1 cup grated parmigiano ( freshly grated , not from a can )
4 eggs
2/3 lb ground beef
2 tablespoons tomato paste
1 clove garlic
1/2 small onion
1/4 cup packed dried funghi porcini
1/3 cup olive oil
1/2 cup dry red wine
1/4 lb mozzarella cheese or 1/4 lb fresh soft provolone cheese ( if you 're in Sicily you will want to use canestrato fresco )
1 cup fresh peas , boiled
flour
breadcrumbs
salt & pepper
oil ( for frying )
organically grown orange leaves , as garnish ( optional )

Instructions

1.Cook the rice according to package instructions with saffron added to the water.

4.Add the dried porcini mushrooms and red wine to the pan and let it cook down.

6.Once the mixture is at room temperature, fold in cooked and drained fresh peas and diced mozzarella or provolone cheese.
7.Shape the mixture into balls or other desired shapes and roll in flour, beaten eggs, and breadcrumbs.
8.Heat oil in a deep fryer or deep pot and fry the balls until golden brown. Let them drain on paper towels and garnish with fresh orange leaves (if desired).
