Ingredients

500 g pumpkin , cubed
2 tablespoons grapeseed oil
1/2 teaspoon cumin
1/2 teaspoon coriander
1/3 teaspoon turmeric
1/2 teaspoon mustard seeds
1/3 teaspoon paprika
1/3 teaspoon cinnamon
1 onion , chopped
2 stalks lemongrass , cut into pieces big enough to find and fish out at the end
1 cube vegetarian chicken flavored broth mix , eg massel
1 cup water
60 g dry coconut powder
1/2 red capsicum , chopped into pieces
1/2 zucchini , small and chopped into small pieces

Instructions

1.Heat 1 tablespoon of grapeseed oil in a large saucepan over medium heat.
2.Add the pumpkin to the pan and fry, stirring occasionally, for 5-10 minutes until it is lightly browned.
3.Remove the pumpkin from the pan and set aside.
4.Add the remaining tablespoon of grapeseed oil to the same pan.
5.Add the cumin, coriander, turmeric, mustard seeds, paprika, and cinnamon to the pan, stirring constantly for 1-2 minutes until fragrant.
6.Add the chopped onion and lemongrass to the pan, and fry for 2-3 minutes until the onion is translucent.
7.Add the vegetarian chicken flavored broth mix and 1 cup of water to the pan.
8.Stir well and bring to a boil.
9.Reduce heat to low and simmer for 10-15 minutes.
10.Add the dry coconut powder, chopped capsicum, zucchini, and pumpkin to the pan.
11.Simmer for a further 10-15 minutes or until vegetables are cooked to your liking.
