Ingredients

6 shallots
2 roma tomatoes
1 pinch ginger
2 teaspoons vegetable oil
1 teaspoon sambhar powder
4 teaspoons toor dal
1/2 teaspoon turmeric
1 pinch hing
1/4 teaspoon tamarind paste
1 teaspoon fenugreek seeds
3 red chilies
1/2 teaspoon coriander seed
5 curry leaves
1/2 teaspoon coconut , turuval
Arachuvitta Vengaya Sambar is a popular South Indian dish that is made with shallots, tomatoes, toor dal, and a blend of aromatic spices. In Tamil language, Arachuvitta means freshly ground masala and Vengaya means shallots, hence the name reflects its authenticity. Instructions

1.Clean and chop the shallots and tomatoes.
2.Dry roast fenugreek seeds,cilantro and coriander seeds.
3.Grind roasted seeds and spices to make masala.
4.Heat oil in a pan. Add ginger, hing and curry leaves.
5.Add shallots and saute for 1-2 minutes.
6.Add tomatoes and fry until soft and mushy.
7.Add sambar powder, turmeric, and toor dal. Mix well.
8.Add 3 cups of water and salt as per the taste.
9.Cook for 2 whistles in a pressure cooker or until soft.
10.Add the tamarind paste and masala to the sambar and cook for 10-15 minutes on low flame until the gravy thickens. Serve hot with rice, papad and crispy veggies.
