1 1/2 cups butter , softened
1 3/4 cups powdered sugar , divided
1 teaspoon orange blossom water
1 egg yolk
3 cups flour
40 almonds , blanched

Instructions

1.Preheat the oven to 325°F (160°C).
2.In a large bowl, beat the butter and 1 cup of powdered sugar until creamy.
3.Add the orange blossom water and egg yolk, and beat until combined.
4.Gradually add the flour, mixing well after each addition.
5.Shape the dough into 40 small balls and place them on a baking sheet lined with parchment paper.
6.Press an almond into the center of each ball.
7.Bake for 20-25 minutes, until lightly golden.
8.Place the remaining 3/4 cup of powdered sugar in a small bowl.
9.While the cookies are still warm, gently roll them in the powdered sugar until coated.
10.Allow to cool completely before serving.
