1 large cucumber , peeled , seeded and thinly sliced
3 plum tomatoes , peeled , seeded , and cut in thin wedges
4 boneless skinless salmon fillets
2 -3 teaspoons vegetable oil
1 cup cooked drained chickpeas
1/2 medium russet potato , peeled and finely chopped
1/2 cup coarsely chopped flat leaf parsley
1/2 cup chopped leeks or 1/2 cup green onion
4 tablespoons butter , cut in pieces
1/2 cup dried breadcrumbs
1 teaspoon ground coriander
1 teaspoon ground cumin
salt and black pepper

1/4 cup tahini ( sesame seed paste )
1/2 cup fresh lemon juice
3 tablespoons olive oil
2 -3 garlic cloves , peeled
1/3 cup fresh lemon juice
1/2 teaspoon grated lemon zest
1/2 teaspoon sugar
1/3 cup olive oil

Instructions

1.Preheat oven to 375°F. Lightly oil a baking sheet.
2.Combine chickpeas, potatoes, parsley, leeks, butter, breadcrumbs, coriander, cumin, and salt and pepper in a food processor. Pulse until combined, but not pureed.
3.Season salmon with salt and pepper.
4.Heat 2 to 3 teaspoons of vegetable oil in a large skillet over medium-high heat.
5.Sear salmon, crust side down, until golden brown, about 3 to 4 minutes.
6.Flip salmon and transfer to the baking sheet, crust side up.
7.Bake until salmon is just cooked through, about 8 to 10 minutes.
8.While salmon is cooking, blend chickpeas, tahini, lemon juice, olive oil, garlic, salt and pepper, and water into a smooth paste in a blender or food processor.
