Ingredients

1 1/4 cups boiling water

1/2 cup brown sugar , packed
3 tablespoons light cream ( I use milk )
1 cup flaked coconut
1/2 cup nuts , chopped

Instructions

1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 X 13 inch baking pan.
2.Combine boiling water and oats and let stand for 20 minutes.
3.Cream together margarine and 1 1/2 cups brown sugar. Add eggs and blend well.
4.Sift together flour, baking powder, baking soda, salt, and nutmeg. Add to creamed mixture and beat well. Stir in oat mixture and apricots.
5.Pour batter into prepared pan.
6.To make the topping: Combine margarine, 1/2 cup brown sugar, and cream in a saucepan. Bring to a boil and remove from heat. Sir in coconut and nuts. Spread over cake batter.
7.Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes.
