Ingredients

155 g plain sweet biscuits
75 g butter
470 g apricot nectar
1 tablespoon gelatin
375 g low-fat cream cheese
1/2 cup caster sugar
1 tablespoon lemon juice
1 1/4 cups cream
1 tablespoon sugar
3 teaspoons arrowroot
reserved apricot nectar
2 teaspoons rum
This Apricot Nectar Cheesecake provides the best of both worlds, combining creamy, delicious cheesecake filling with a refreshing apricot topping. Instructions

1.Grease a 23 cm loose-bottomed cake tin.
2.Crush biscuits in a food processor made into fine crumbs.
3.Melt butter in a small saucepan over low heat. Add biscuit crumbs and stir to combine. Press mixture over base of prepared tin.
4.Reserve 1/4 cup of apricot nectar aside. In a small saucepan, sprinkle gelatin over remaining nectar. Stir over low heat until dissolved.
5.In a medium bowl, beat cream cheese, caster sugar, and lemon juice together using an electric mixer. Gradually beat in cream, a small quantity at a time, until mixture thickens.
6.Pour gelatin mixture into the cheese mixture, stir to combine.
7.Pour the mixture over the prepared biscuit base in the pan. Refrigerate for several hours.
8.In a small saucepan, combine the reserved apricot nectar with the sugar and arrowroot. Stir over low heat until mixture boils and thickens. Stir in the rum.
9.Serve the cheesecake topped with apricot sauce.
