Ingredients

1/2 cup fresh lemon juice

16 wonton skins
1 large egg , lightly beaten
4 cups vegetable oil
cinnamon sugar or vanilla sugar
These Apricot-Ginger Won Tons are a fusion of Chinese and Middle Eastern flavors, combining the sweetness of apricots with the spice of ginger. Instructions

1.In a small saucepan, combine the lemon juice, honey, lemon zest, and brown sugar. Heat on medium until the sugar dissolves, stirring occasionally. Reduce heat and simmer for 5 minutes. Remove from heat and set aside.
2.In a food processor, pulse the apricots, walnuts or macadamias, and ginger until finely chopped.
3.Lightly dust a large, flat surface with cornstarch. Place a wonton skin on the surface and brush the edges with beaten egg. Place about 1/2 teaspoon of filling in the center of the skin.
4.Fold the skin in half diagonally to form a triangle and press the edges together to seal. Repeat with the remaining skins and filling.
5.Heat the vegetable oil in a deep, heavy-bottomed skillet or fryer until hot. Add the wontons, a few at a time, and fry until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
6.Serve the wontons warm with the lemon-honey sauce for dipping, and sprinkle with cinnamon or vanilla sugar if desired.
