Ingredients

1 cup chopped dried apricot
1 cup apricot nectar
125 g softened butter
2/3 cup sugar
2 eggs , separated
1 1/2 cups desiccated coconut
1 1/2 cups self raising flour
1/2 cup chocolate chips

Instructions

1.Preheat the oven to 180°C.
2.In a small saucepan, combine the chopped dried apricots and apricot nectar and bring to the boil.
3.Remove from the heat and allow the mixture to cool for 10 minutes.
4.In a large bowl, cream together the butter and sugar until light and fluffy.
5.Beat in the egg yolks.
6.Stir in the apricot and coconut mixture.
7.Fold in the flour.
8.Beat the egg whites until stiff peaks form.
9.Fold into the cake mixture.
10.Pour into a 20cm round cake tin lined with baking paper.
11.Sprinkle the top with chocolate chips.
12.Bake for 50-60 minutes or until a skewer comes out clean.
13.Remove from the oven and allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
