Ingredients

1 cup raisins ( light or dark )
1/4 cup apricot flavored white wine
1 1/2 cups dried apricots , pressed down
1 teaspoon cinnamon
1/2 cup white sugar
1/2 teaspoon white wine ( from raisins )
1 cup cashews ( chopped roughly )
1 teaspoon vanilla
1/4 cup brown sugar
20 filo pastry ( buy frozen and thaw before using )
3/4 cup unsalted butter , melted
1/2 cup honey
1/2 cup water
1/4 cup water , reserved from apricots soak or 1/4 cup canned apricot nectar
1/2 cup white sugar
1/2 teaspoon vanilla
1 teaspoon wine , from raisins soak

Instructions

1.Preheat oven to 350°F.
2.In a mixing bowl, combine raisins and apricot flavored white wine. Microwave for 30 seconds. Let sit for 10 minutes.
3.In another bowl, combine the pressed down dried apricots, cinnamon, white sugar, white wine (from raisins), cashews, and vanilla. Mix well.
4.In a small bowl, combine brown sugar and cinnamon.
5.Lightly butter a baking dish.
6.Lay 1 filo pastry sheet on the bottom of the dish. Brush with melted butter. Repeat with 6 more sheets, brushing each layer with butter. Sprinkle cinnamon sugar mixture over the 7th layer.
7.Add half the apricot mixture over the cinnamon sugar layer. Fold over the edges of filo pastry and butter the edges.
8.Repeat step 6 with remaining filo pastry.
9.Add the rest of the apricot mixture over the 7 layers. Sprinkle cinnamon sugar mixture. Fold over the edges and butter the edges.
10.Cut the baklava diagonally in diamond or square shapes into 3-4 places depending on your size preferences.
11.Bake for 25-30 minutes until golden brown.
12.In a saucepan, combine honey, water, reserved water from apricots soak or canned apricot nectar, white sugar, vanilla, and wine from raisins soak. Mix well and bring to a boil.
13.Reduce heat and let the mixture simmer for 10-15 minutes until thickened. Remove from heat.
14.Pour the mixture over the hot baklava. Let cool.
15.Slice and serve.
