Instructions

1.Preheat oven to 180°C (160°C fan-forced). Lightly grease a 3 cm-deep, 16 cm x 26 cm (base) slab pan. Line with baking paper, allowing a 2 cm overhang.
2.In a large bowl, sift together self-raising flour and mixed spice.
3.Add diced apricots, chopped pistachios, and dark brown sugar. Stir to combine.
4.Add melted butter, lightly beaten eggs, lemon juice, and vanilla essence. Stir to combine.
5.Spoon the mixture into the prepared pan and smooth the surface.
6.Bake for 25 to 30 minutes or until a skewer inserted into the centre comes out clean.
7.Leave to cool for 10 minutes. Brush the top with apricot jam to glaze. Cut into slices to serve.
