Ingredients

1 1/2 cups butter , softened
2 cups sugar
2 large egg yolks
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
4 cups all-purpose flour
1 1/3 cups blanched almonds , toasted and chopped fine ( to toast almonds , bake in preheated 350 oven 10 minutes , cool . )
1 jar apricot preserves

Instructions

1.Preheat oven to 350°F. Grease and flour a 13x9 inch baking pan.
2.In a large bowl, beat butter and sugar until light and fluffy.
3.Beat in egg yolks, vanilla extract, and almond extract.
4.Gradually beat in flour.
5.Stir in chopped almonds.
6.Press half of the dough into the prepared pan.
7.Spread apricot preserves over the dough.
8.Drop remaining dough by spoonfuls over preserves and press lightly.
9.Bake for 35-40 minutes or until lightly browned.
10.Cool completely in pan on a wire rack before cutting into bars.
