Instructions

.Preheat oven to 375°F.
.Mix together the chopped apple, shredded brie cheese, breadcrumbs, chopped onion, and ground sage in a medium bowl.
.On one edge of each chicken breast, slice a pocket, being careful not to cut through the other side.
.Stuff each pocket generously with the breadcrumb mixture. Place a thin layer of sliced apples and a slice of brie cheese on top of the stuffing.
.Salt and pepper the chicken breasts and then sear them in a skillet with butter and olive oil over medium-high heat until they are golden brown, about 4-5 minutes on each side. Remove the breasts from the skillet and place them in an oven-safe baking dish.
.Pour the white wine and chicken broth into the same skillet and scrape the bottom of the pan to mix in the leftover juices.
.Dissolve cornstarch in 2 tablespoons of cold water and add it to the skillet. Bring the mixture to a boil and whisk until it thickens into a gravy.
.Pour the gravy evenly over the chicken breasts and bake in the oven for 25-30 minutes until fully cooked.
.Garnish the chicken breasts with sliced almonds and fresh chopped parsley.
