Instructions

1.Preheat the oven to 375 degrees F (190 degrees C). Grease and flour three 9-inch round cake pans.

3.In a large bowl, cream together the white sugar and shortening until light and fluffy. Beat in the eggs one at a time, then stir in the buttermilk and mix well.

6.Remove the cakes from the oven and let cool in the pans for 10 minutes before turning out onto wire racks to cool completely.
7.In a large saucepan, simmer the dried apples and water over low heat for 30 to 45 minutes, or until the apples are tender and the mixture is thick and syrupy.
8.To assemble the cake, place one cake layer on a cake plate. Cover with a third of the apple filling and sprinkle with a third of the reserved spice mixture. Repeat with the remaining cake layers and filling, ending with the spice mixture on top.
