Ingredients

1/2 lb boneless skinless chicken breast
6 tablespoons low-fat yogurt
2 tablespoons low-fat mayonnaise

1 mango , ripe ( substitute mandarin orange slices , if desired )
1 apple , a small Fiji apple ( if you would like more tang , use a less-sweet apple such as Granny Smith )
1 stalk celery , medium sized
4 ounces fresh mozzarella cheese
6 -8 sprigs cilantro
1 cup greens ( field greens , about two small handfuls )
This refreshing salad is a perfect mix of fruits, veggies, and lean protein. Instructions

1.Preheat oven to 375°F.

5.In a mixing bowl, whisk together low-fat yogurt, mayonnaise, salsa, lime juice, and curry powder.
6.Add the cooled chicken to the mixing bowl, along with sliced mango, apple cubes, diced celery, sliced fresh mozzarella cheese, and cilantro sprigs. Mix thoroughly.
7.Chill the mixture in the fridge for at least an hour.
8.Serve on a bed of field greens.
