Ingredients

2 tablespoons ground flax seeds
1/4 cup hot water

1/4 cup cornstarch

1 teaspoon guar gum
1/2 teaspoon sea salt
1/2 tablespoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
3/4 cup dark brown sugar
1/3 cup canola oil
1 teaspoon pure vanilla extract ( make sure it 's GF )
1 teaspoon rice vinegar
1/4 cup soymilk
1 apple , with peel , coarsely grated
3/4 cup hazelnuts , toasted and chopped finely ( not ground , though )

Instructions

1.Preheat the oven to 375°F (190°C) and place muffin cups into a muffin pan.
2.In a small bowl, mix the ground flaxseed and hot water together, let it stand for 5 minutes.
3.In a medium bowl, combine the rice flour, sorghum flour, potato starch, cornstarch, millet flour, baking powder, baking soda, guar gum, sea salt, cinnamon, nutmeg, and ginger.
4.In a larger bowl, whisk together the dark brown sugar, canola oil, vanilla extract, and rice vinegar until combined.
5.Mix the dry ingredients into the wet ingredients until thoroughly combined.
6.Add the grated apple and chopped hazelnuts into the muffin batter. Mix until the apple and hazelnuts are evenly distributed throughout.
7.Fill the muffin cups 2/3 full with the muffin batter.
8.Bake the muffins for 25-30 minutes or until a toothpick comes out clean when inserted into the center of the muffin.
9.Remove the muffins from the oven and let them cool in the pan for 10 minutes.
10.Transfer the muffins onto a wire rack to cool completely.
