1 lb granny smith apple
1/4 cup granulated sugar
4 tablespoons water
1/4 teaspoon ground cinnamon
1/2 lemon , zest of , finely grated
1 lb puff pastry
3 tablespoons marmalade
1/4 cup milk ( for brushing )

Instructions

1.Preheat your oven to 400°F (200°C).
2.Peel and thinly slice the apples. Place the sliced apples, granulated sugar, water, cinnamon, and lemon zest into a medium saucepan and cook over medium heat for 10-15 minutes until the apples are tender and the liquid has mostly evaporated. Leave to cool.
3.Roll out the puff pastry on a floured surface to around 1/4 inch thick. Cut out a circle of pastry around 15 inches in diameter and transfer it to a baking sheet lined with parchment paper. Spread the marmalade over the center of the pastry.
4.Arrange the apple slices in concentric circles over the top of the marmalade.
5.Brush the pastry with milk and bake for around 20-25 minutes until the pastry is golden brown and puffed up. Serve warm or cold.
