1 lb granny smith apple
1/4 cup granulated sugar
4 tablespoons water
1/4 teaspoon ground cinnamon
1/2 lemon , zest of , finely grated
1 lb puff pastry
3 tablespoons marmalade
1/4 cup milk ( for brushing )

Instructions

1.Preheat your oven to 200°C.
2.Peel, core and thinly slice the apples.
3.In a saucepan, mix the sugar, water, cinnamon and lemon zest. Heat the mixture until the sugar has dissolved.
4.Add the apples to the mixture and toss until evenly coated. Cook for 10 minutes over medium heat, until the mixture starts to caramelise.
5.Roll out the puff pastry into a 9-inch circle and place it on a baking sheet.

7.Brush the milk over the edges of the pastry.
8.Bake for 25-30 minutes, until the pastry is golden brown and the apples are tender.
