1 lb granny smith apple
1/4 cup granulated sugar
4 tablespoons water
1/4 teaspoon ground cinnamon
1/2 lemon , zest of , finely grated
1 lb puff pastry
3 tablespoons marmalade
1/4 cup milk ( for brushing )

Instructions

1.Preheat oven to 375°F.
2.Roll out puff pastry on a lightly floured surface until it is approximately 1/8 inch thick and in the shape of a rectangle.
3.Cut the edges to make a neat rectangle, then transfer the pastry to a baking sheet.
4.Peel, core and slice the apples, place them in a saucepan with water, sugar, cinnamon, lemon zest and bring to a boil over a medium heat. Lower the heat and simmer for 5-7 minutes until the apples are slightly softened.
5.Add the marmalade and cook for a few more minutes until the mixture is jammy.
6.Spread the apple mixture evenly over the pastry rectangle, leaving a 1-inch border around the edges.
7.Fold the edges of the pastry over to create a crust around the apple mixture and brush the edges with milk.
8.Bake for 25-30 minutes or until golden brown.
9.Serve warm or at room temperature with whipped cream or vanilla ice cream.
