1 large egg , beaten

3 large Granny Smith apples , cored , peeled and cut into 1-inch dice
1 dash turbinado sugar

almond pastry cream , at room temperature , recipe follows
1 box frozen puff pastry , thawed according to package directions
1 1/2 cups whole milk
1/2 cup sugar
2 tablespoons almond paste

Instructions

1.Preheat the oven to 350 degrees F.
2.Heat a medium nonstick saute pan over medium heat, melt butter, and add diced apples.
3.Cook the apples for approximately 5-7 minutes, until tender. Add turbinado sugar, brown sugar, cinnamon, salt, and cook for another 2-3 minutes until the sugar has melted and the apples are coated with the cinnamon sugar mixture.
4.Remove from heat and let the apples cool down.
5.Roll out the puff pastry to approximately 1/8 of an inch thick on a floured surface.
6.Cut the pastry into 12 circles, then roll out each circle into a small oval.
7.Place a spoonful of the almond pastry cream onto one half of each oval and spread it out almost to the edge.
8.Top the almond pastry cream with a spoonful of the apple mixture.
9.Fold the other half of the pastry over the apple mixture and seal the edges by pressing down with a fork. Repeat with each circle of pastry until you have 12 apple empanadas.
10.Brush the tops of the empanadas with beaten egg, then sprinkle with turbinado sugar.
11.Bake in the preheated oven for approximately 15-20 minutes, or until the empanadas are golden brown and crispy.
12.Let the apple empanadas cool down before serving.
