1 gala apples , peeled and diced
1 clementine , peeled and diced
1/4 cup rice vinegar
1/4 cup light brown sugar
1 lemon , juice of
1/4 teaspoon lemon zest
1/4 teaspoon cinnamon
3 garlic cloves , roasted and mashed
1/4 teaspoon red pepper flakes ( optional )

Instructions

1.In a large saucepan, combine all the chopped apples, clementines and lemon juice. Heat on medium-high for 3 minutes until all the fruits are well combined.
2.Stir in cinnamon, lemon zest, mashed garlic, red pepper flakes, rice vinegar and brown sugar into the fruit mixture. Cook for an additional 15 minutes on low heat or until the mixture gets a jam-like consistency.
3.Remove the chutney from the heat and let it cool completely.
4.Store in an airtight container and refrigerate it for at least 2 hours before serving.
