Ingredients

2 1/2 cups fresh apple cider ( I used Filsinger 's filsingersorganic.com )
3 tablespoons fresh gingerroot ( cut into 2 slices )
2/3 cup full-fat coconut milk ( pick the highest fat concentration you can find , I used Thai Kitchen )
2 teaspoons apple pie spice
1/2 teaspoon sea salt
1/3 cup heavy cream
1/4 cup water
1 cup sugar
1/2 cup dark brown sugar
1/3 cup corn syrup
2 tablespoons maple syrup
1/2 cup unsalted butter , preferably cultured , cubed ( or regular unsalted butter )
Apple Cider Creme Caramels are a luxurious, creamy dessert that combines the sweetness of apple cider with the creaminess of coconut milk and the soothing warmth of gingerroot. This dessert is perfect for fall or winter gatherings, where the rich flavors of caramel and apple can be savored with friends and family.

Instructions

1.Combine apple cider and gingerroot in a saucepan. Boil over medium heat and cook until the cider is reduced to 1/3 cup, approximately 30 minutes.
2.Strain the mixture through a fine sieve into a bowl, add coconut milk, apple pie spice, and sea salt. Whisk together until the mixture is smooth.
3.In another saucepan, combine heavy cream and water. Heat at low temperature until warm.
4.In a medium-size pot, mix sugar, corn syrup, brown sugar, and maple syrup. Place over medium heat and cook until the sugar is dissolved.
5.Increase the heat to high and cook until the mixture turns golden brown, approximately 10-15 minutes.
6.Remove from heat and stir in butter cubes, one at a time, until the mixture is smooth.
7.Pour the caramel mixture into the bowl of apple cider, whisk until the caramel completely dissolves. Transfer to a prepared 8-inch non-stick pan.
8.Let the mixture rest at room temperature for at least 2 hours.
9.Once the mixture is set, slice it into small squares and serve.
