The Apple and Pomegranate Tart Tartin is a classic French dessert that is traditionally made with apples cooked in caramelized sugar and butter, then covered with a pastry crust and baked. This modern take on the traditional recipe adds pomegranate juice to the mix to add a burst of bright flavor and a healthy twist. This dessert is perfect for fall and winter, as it features the season's freshest apples and pomegranates, but can be enjoyed any time of year as a decadent treat.

Instructions

1.In a large mixing bowl, combine flour, sugar and salt. Add chilled butter cubes and using your fingers, mix well until the mixture resembles coarse breadcrumbs.
2.Add creme fraiche or sour cream and use your hands to form a dough. Knead the dough gently and shape into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
3.In a medium saucepan, bring pomegranate juice to a boil. Simmer and reduce the liquid to 1/2 cup. Remove from heat and set aside.
4.Preheat the oven to 375°F. In a 10-inch oven-safe skillet, melt unsalted butter over medium heat. Add sugar and stir until the sugar dissolves.
5.Add apple quarters and stir well to coat evenly. Cook for 8-10 minutes until the apples are tender. Add allspice, salt, and reduced pomegranate juice. Stir well and remove from the heat.
6.Roll the chilled dough on a lightly floured surface and cut into a circle just large enough to cover the apples. Cover the apples with the dough, tucking the edges around the apples.
7.Bake the tart for 30 minutes or until the crust is golden brown. Remove from oven and let cool for a few minutes. Invert the tart onto a serving plate and serve with a scoop of vanilla ice cream.
