Instructions

.Soak the dried plums in hot water or white wine for at least 15 minutes to soften.
.Preheat the oven to 375°F.
.Butterfly the pork loin by cutting it lengthwise down the center, without cutting all the way through, to create a pocket for stuffing.
.Season the inside of the pork loin with salt and freshly ground black pepper.
.Place the sliced apples and soaked plums in a food processor and pulse until coarsely chopped.
.Spread the mixture evenly inside the pork loin pocket.
.Tie the pork loin with kitchen twine to ensure the stuffing stays inside.
.Heat the olive oil and butter in an oven-safe skillet over medium-high heat.
.Sear the pork loin for 2-3 minutes on each side until browned.
.Pour in the white wine and scrape up any browned bits from the bottom of the skillet.
.Transfer the skillet to the preheated oven and bake for 30-40 minutes, or until the pork reaches an internal temperature of 145°F.
.Remove the pork loin from the skillet and let it rest for 10 minutes before slicing.
.In the meantime, prepare the sauce by adding the half-and-half and black currant jelly to the skillet.
.Cook over medium heat until the sauce has thickened, stirring constantly.
.Season with salt and freshly ground black pepper, to taste.
.Serve the sliced pork loin with the sauce on top and enjoy!
