Ingredients

3 granny smith apples
1/4 cup dried apricot , chopped
1 tablespoon custard powder
1 teaspoon cinnamon
1 teaspoon ground mixed spice
1/2 cup blueberries ( fresh or frozen )
6 phyllo pastry sheets
1 tablespoon milk
icing sugar , to dust
Apple and Blueberry Strudel is a delicious dessert that originates from Eastern Europe. It's a classic pastry that can be eaten as a dessert or as a sweet snack. This recipe adds a contemporary twist to the traditional recipe by adding blueberries to the apple filling, creating a wonderful mixture of sweet and tart flavors. Instructions

1.Preheat oven to 375°F / 190°C. Line a baking tray with baking paper.
2.Peel, core, and slice the apples. Place in a mixing bowl. Add 1 tablespoon of custard powder, 1 teaspoon of cinnamon, and 1 teaspoon of ground mixed spice. Mix well.
3.Add chopped dried apricots and blueberries to the apple mixture.
4.Lay a sheet of phyllo pastry on the baking tray. Brush with melted butter or oil. Add more sheets of phyllo pastry, brushing with butter or oil in between each layer.
5.Spoon the apple and berry mixture along the center of the pastry. Roll up the pastry to enclose the filling, tucking in the ends. Brush milk on top of the pastry.
6.Bake for 25-30 minutes until golden brown. Remove from the oven and leave to cool for 5 minutes.
