Instructions

.In a large bowl, combine the water, pumpernickel flour, bread flour, yeast, and salt until a shaggy dough forms.
.Cover the bowl with plastic wrap and let the dough sit at room temperature overnight.
.The next day, in a separate large bowl, whisk together the water, nonfat dry milk powder, sugar, yeast, unsalted butter, salt, and 2 cups of the bread flour until a smooth dough forms.
.Add in the remaining bread flour, 1/2 cup at a time, until the dough comes together and is soft and pliable.
.Knead the dough for 10 minutes, then transfer it to a bowl and cover with plastic wrap. Let it rise in a warm place for 1-2 hours, until doubled in size.
.Meanwhile, in a separate large bowl, toss the diced apples, sliced almonds, cinnamon, nutmeg, and ground cardamom together until well combined.
.Preheat your oven to 375°F.
.Grease a large baking dish or skillet.
.Once the dough has risen, roll it out into a large rectangle on a floured surface.
.Spread the softened butter over the entire surface of the dough.
.Sprinkle the brown sugar over the butter, making sure it's distributed evenly.
.Pour the almond liqueur over the brown sugar.
.Spread the apple mixture over the sugar and liqueur.
.Roll up the entire rectangle tightly, then slice it into individual buns.
.Place the buns in the greased baking dish or skillet, making sure they are evenly spaced apart.
.Bake for 30-35 minutes, until golden brown and cooked through.
