Ingredients

4 cups idli rice
3/4 cup jaggery
1/2 cup coconut , freshly grated
1/2 cup boiled sona masoori rice
1/4 cup white sugar
400 ml water ( for grinding the rice , coconut , jaggery , plus a little more for proofing the yeast )
Appams are a popular South Indian breakfast dish that can be served with coconut milk, sweetened coconut gratings, or a curry. The fermented batter of appams is used to create a soft and fluffy pancake that pairs well with a range of accompaniments. Instructions

1.Soak Idli rice for 4 hours in water.
2.Soak jaggery and grated coconut in half a cup of water for an hour.
3.Grind idli rice and boiled sona masoori rice to make a smooth batter with the help of water used for soaking the rice along with another 200 ml of water.
4.Add the grated coconut and jaggery mixture into the batter.
5.Mix well and let the batter ferment for at least 5 hours or overnight.
6.Add salt and a little water according to the batter's consistency right before making the appams.
7.Take a small ladle full of the batter and pour it in the center of the appam pan.
8.Immediately swirl the pan till the batter sticks to the sides of the pan.
9.Cover the pan with a lid and cook the appams on low flame for a minute or till the edges of the appams turn slightly brown. Remove the appams from the pan and repeat the process with the remaining batter.
