Instructions

1.In a large mixing bowl, combine the flour, lemon rind, egg yolk, and 5 tablespoons of sugar.
2.Cut in the unsalted butter and mix until crumbly.
3.Add the milk and mix until dough forms.
4.Roll the dough out to fit an 8-inch springform pan and line the bottom with the soft breadcrumbs.
5.Layer the sliced apples on top of the breadcrumbs.
6.In a small mixing bowl, combine the remaining sugar, rum, butter, lemon juice, and raisins. Mix well and pour over the apples.
7.In another mixing bowl, whisk together the beaten eggs and milk. Pour the egg mixture over the apples.
8.Bake the cake in preheated oven at 350°F (175°C) for 50-60 minutes or until a toothpick inserted into the center comes out clean.
