Ingredients

1 cup plain flour
2/3 cup sugar
1 cup rolled oats
1 cup desiccated coconut
100 g butter
1/4 cup golden syrup
1/2 teaspoon bicarbonate of soda
1 tablespoon hot water

Instructions

1.Preheat oven to 160C. Grease 20cm (base) square cake pan. Line base and sides with baking paper, allowing paper to overhang the sides.
2.Combine flour, sugar, oats and coconut in a large bowl. Melt butter and golden syrup in a medium saucepan. Combine bicarbonate of soda and hot water in a jug. Add to butter mixture (it will foam). Quickly pour over oat mixture. Stir well to combine. Spoon into prepared pan. Using a spoon, press mixture evenly over base.
3.Bake for 25 to 30 minutes or until golden. Allow to cool completely in pan. Lift out. Cut into squares. Serve.
