3/4 cup plain flour
1 1/2 cups rolled oats
3/4 cup white sugar
1/2 cup desiccated coconut
1/2 cup chopped and toasted macadamias
2 tablespoons water
1 tablespoon golden syrup
1 teaspoon baking soda
125 g butter

Instructions

1.Preheat the oven to 160°C and line a baking tray with baking paper.
2.In a large bowl, mix together the flour, rolled oats, sugar, coconut and macadamias.
3.In a small saucepan, stir together the water and golden syrup and bring to a boil.
4.Remove from heat and add baking soda, mixing until the mixture froths.
5.Melt the butter and stir into dry mixture until well combined.
6.Add the baking soda mixture to the butter and dry mixture, stirring until well combined.
7.Roll teaspoonfuls of the mixture into balls and place on the lined baking tray, allowing room for spreading.
8.Gently flatten balls using a fork.
9.Bake in the preheated oven for 15-20 minutes or until lightly browned.
10.Remove from oven and cool on wire racks.
