Ingredients

2 1/4 cups oatmeal ( I use slow cooking oatmeal , original recipe calls for rolled oats , but I think that is the same thin )
2 cups coconut ( see description , I used sweetened , but original recipe calls for unsweetened )
1 1/2 cups flour
3/4 cup sugar ( original recipe calls for 1 cup )
1/3 cup boiling water
1 1/2 teaspoons baking soda
10 1/2 tablespoons butter , unsalted
3 tablespoons maple syrup ( I used pure maple syrup , original recipe calls for golden syrup which is not available where I live )
Anzac biscuits are a traditional Australian and New Zealand biscuit, named after the Australia and New Zealand Army Corps (ANZAC) that fought in World War I, who are supposed to have received these biscuits from home. This recipe puts a twist on the classic recipe, using sweetened coconut and maple syrup instead of unsweetened coconut and golden syrup, which can be hard to find in some areas. The biscuits are soft and chewy with a slightly crunchy exterior, and are a great snack for any time of the day.

Instructions

1.Preheat oven to 170°C / 338°F.
2.Combine oatmeal, coconut, flour, and sugar in a large bowl.
3.Melt butter and maple syrup (or golden syrup if available) and mix baking soda with boiling water in a separate bowl.
4.Stir the butter mixture into the dry ingredients until well combined.
5.Add the baking soda and water mixture, stirring until the ingredients are well combined.
6.Roll the mixture into balls and place them on lined baking trays about 2.5 cm / 1 inch apart.
7.Bake for 12-15 minutes or until golden brown.
8.Allow the cookies to cool on the trays for 5 minutes, then transfer them to a wire rack to cool completely.

PROS

These biscuits are easy to make, delicious, and perfect for a snack with tea or coffee.

They are also vegan-friendly if maple syrup is used!

CONS

These biscuits are high in sugar and fat, making it important to enjoy them in moderation as part of a balanced diet.
