Ingredients

1 round focaccia bread , cut in half horizontally
4 -6 tablespoons tapenade ( Try Ruth Reichl 's Tapenade , Super Easy and Elegant ! )
2 cups cooked boneless skinless chicken breasts , shredded
1/2 cup drained marinated artichoke hearts , coarsely chopped
1/2 cup sun-dried tomato packed in oil , chopped drained
1/2 cup bottled roasted red pepper , coarsely chopped
2 ounces prosciutto , thinly sliced
1/2 cup Fontina cheese , shredded
4 -8 pepperoncini peppers ( optional )

Instructions

1.Preheat oven to 375°F.
2.Place Focaccia bread on a baking sheet, cut side up. Spread tapenade over both halves of bread.
3.In a mixing bowl, toss together chicken, artichoke hearts, sun-dried tomatoes, and roasted red peppers until well mixed. Scatter mixture over bottom half of bread.
4.Layer prosciutto over chicken mixture. Scatter Fontina cheese over prosciutto and chicken. Finally, top with pepperoncini peppers if desired.
5.Place baking sheet in oven and bake for 15-20 minutes or until cheese is melted and bubbly.
6.Remove sandwich from oven and slice into portions. Serve hot and enjoy!
