12 black peppercorns

2 lbs beef heart meat , cut in 1-inch cubes
3 tablespoons olive oil

Instructions

1.In a large bowl, combine the tarragon vinegar, ground cayenne pepper, saffron, minced garlic, black peppercorns, and salt to taste.
2.Add in the water and whisk until well combined.
3.Add the beef heart meat cubes and toss to coat.
4.Cover and refrigerate for at least 2 hours or overnight to marinate.
5.When ready to cook, preheat your grill or grill pan on medium-high heat.
6.Thread the beef cubes onto skewers, alternating with the olive oil.
7.Grill the skewers for about 2-3 minutes per side or until cooked through and slightly charred.
8.Serve hot with your favorite dipping sauce.
