2 green onions , cut into 1 1/2 inch pieces

Instructions

1.In a small bowl, mix together 2 teaspoons of cornstarch, 2 teaspoons of soy sauce, 2 teaspoons of dry sherry, and salt.
2.Cut chicken into small pieces and coat with the mixture.
3.In another small bowl, mix together 1 tablespoon of cornstarch, 1 tablespoon of soy sauce, chicken broth, red wine vinegar, and 1 teaspoon of dry sherry.
4.Heat 2 tablespoons of vegetable oil in a wok and stir-fry chicken for 5-7 minutes. Remove from wok and set aside.
5.In the same wok, heat 1 tablespoon of vegetable oil and stir-fry peanuts and chili peppers for 30 seconds.
6.Add ginger and green onions and stir-fry for another minute.
7.Add chicken back to the wok and pour in the soy sauce mixture. Stir-fry for another minute or until chicken is fully cooked.
