Ingredients

3 boneless skinless chicken breasts , cooked and shreaded
1 large sweet onion , chopped
2 -5 jalapenos , minced ( depending on how hot you want it )
4 garlic cloves
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon flour
2 cups sour cream
2 cups chicken broth
1 1/2 cups milk
8 large flour tortillas
1 cup cheese , divided ( I suggest Monterey )
1/4 cup cilantro , chopped ( optional )
1 tablespoon lime juice ( optional )
cooking spray
additional sour cream , cheese , cilantro , guacamole and or salsa , for serving
Anna's Sour Cream Chicken Enchiladas are a classic Tex-Mex dish that combines the creamy tanginess of sour cream with the spicy heat of jalapenos. The dish is easy to prepare and is perfect for a family dinner or a potluck party. The tortillas are loaded with seasoned shredded chicken, fresh onions, and cilantro, and smothered in a rich, delicious sour cream sauce. This classic enchilada recipe is sure to become a family favorite.

Instructions

1.Preheat your oven to 350°F. Spray an 11x 15 inch baking dish with cooking spray.
2.In a large skillet, sauté the onions and jalapenos with butter and olive oil over medium-high heat until tender.
3.Add garlic and cook for an additional minute before adding flour.
4.Pour in chicken broth and milk, stirring constantly until sauce has thickened slightly and comes to a boil.
5.Reduce heat to low and mix in sour cream, lime juice, and 1/2 cup cheese. Add chicken and cilantro, stirring until well combined.
6.Scoop about 1/4-1/3 cup of chicken mixture onto the center of each tortilla and roll up, placing seam side down in prepared baking dish.
7.Pour remaining sauce evenly over the enchiladas and sprinkle with remaining cheese.
8.Bake for 20-25 minutes or until cheese is melted and bubbly. Serve with additional sour cream, cilantro, guacamole, and/or salsa.
