1 3/4 lbs ground beef
2 large eggs
2 lightly packed tsp lemon zest , finely grated
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh thyme
2 teaspoons garam masala ( or any mixed spice you like )
1 tablespoon Worcestershire sauce
kosher salt
fresh ground black pepper
9 slices sliced bacon

Instructions

1.Preheat the oven to 350°F.
2.In a large skillet, heat 2 tablespoons of olive oil over medium heat.
3.Add chopped onions, mushrooms, and garlic and cook until softened.
4.In a separate bowl, soak the sliced bread in milk.
5.In a large mixing bowl, combine the Italian sausage, ground beef, eggs, lemon zest, chopped basil, chopped thyme, garam masala, Worcestershire sauce, salt, and pepper.
6.Add the soaked bread and the cooked onion, mushroom, and garlic mixture to the mixing bowl and stir well to combine.
7.Line a loaf pan with bacon slices, making sure to leave enough overhang to cover the top of the loaf. Add the meatloaf mixture to the pan and press it down evenly. Fold the overhanging bacon slices over the top of the meatloaf to cover it completely.
8.Bake in preheated oven for approximately 1 1/4 hours or until the internal temperature reaches 160°F.
9.Remove from the oven and let it rest for 10 minutes before slicing and serving.
