Ingredients

4 eggs
500 g icing sugar
2 tablespoons kirsch
1 tablespoon anise ( for Aniskrabeli seeds and for Anisbroetli ground )
1 pinch salt
600 g plain flour
Aniskrabeli and Anisbroetli are traditional Swiss cookies that originated in the canton of Zurich. These soft, crunchy and flavorful cookies are popular across Switzerland and a staple during Christmas. The star ingredient in these cookies is the anise, which is a common spice used in Swiss cuisine. Aniskrabeli are small, bite-sized cookies while Anisbroetli are larger, and they have a unique sweet anise taste that is distinctive to Swiss Cookies. These cookies are perfect for satisfying your sweet cravings or as a teatime snack.

Instructions

1.Preheat the oven to 180°C (356°F).
2.In a bowl, beat the eggs with icing sugar, kirsch, anise seeds and salt until light
3.Gradually add flour to make a stiff dough.
4.For Aniskrabeli:
5.Divide the dough into 2 portions. Roll each portion into sausage shape, 1 1/2 cm diameter on a floured surface. Cut into 3 cm lengths and place on a greased tray.
6.For Anisbroetli:
7.Roll the dough on a floured surface to 4 mm thickness.
8.Cut into rounds using cookie cutters.
9.Place on a greased & floured baking tray and sprinkle with anise seeds.
10.Bake both the cookies for 10-12 minutes or until lightly golden.

They are soft, crispy and crunchy from outside and have a melt-in-your-mouth texture from inside.
