Ingredients

1 1 lb leftover beef roast or 1 lb leftover lamb roast
1 tablespoon rice vinegar or 1 tablespoon apple cider vinegar
1 1/4 teaspoons salt , divided
3/4 teaspoon ground turmeric , divided
2 medium russet potatoes
6 tablespoons canola oil , divided
1 medium yellow onion , halved and thinly sliced , about 1 1/2 cups
1 1/2 tablespoons minced fresh ginger
1/4 teaspoon cayenne
Anglo-Indian Beef (Or Lamb) Stir-Fry is a South Asian-inspired recipe that is budget-friendly and perfect for using up leftover food. Beef or lamb and potatoes are seasoned with a mix of Indian spices and stir-fried to perfection. The dish is a hearty meal, making it perfect for a quick weeknight dinner or an easy way to use up leftover roasts from your Sunday lunch.

Instructions

1.Take the leftover roast meat and cut it into thin slices.
2.Combine rice vinegar or apple cider vinegar, 1 teaspoon of salt, and 1/2 teaspoon turmeric together.
3.Add the meat slices into the mixture and marinate it for 15-20 minutes.
4.Peel and cut the potatoes into 1/2 inch cubes and rinse them under cold water.
5.Heat 3 tablespoons of canola oil in a wok over high heat and fry the potatoes until they are golden brown, for approximately 8 minutes. Ensure you flip them occasionally.
6.Remove the potatoes from the wok and set them aside.
7.Cook the onion and ginger in the same wok with the remaining canola oil over medium heat for 5 minutes,
8.Add the meat, potato, cayenne, 1/4 teaspoon salt, and 1/4 teaspoon turmeric.
9.Cook the mixture while stirring occasionally for 5-6 minutes until the beef or lamb is browned.
10.Your Anglo-Indian Beef (Or Lamb) Stir-Fry is now ready to serve!
