Ingredients

2 pounds skinless , boneless chicken breast meat - cut into chunks
1 can condensed cream of chicken soup
1 1/4 cups sour cream
1/4 teaspoon chili powder
1 tablespoon butter
1 small onion , chopped
1 can chopped green chilies , drained
1 package mild taco seasoning mix
1 bunch green onions , chopped , divided
1 cup water
1 teaspoon lime juice
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
5 flour tortillas
3 cups Cheddar cheese , shredded , divided
1 can enchilada sauce
1 can sliced black olives
Enchiladas are a classic Mexican dish that originated in the city of Cuernavaca in the 19th century. Traditionally, they are made by filling a tortilla with meat, cheese, and other ingredients, and rolling it up before being covered in a chili sauce and baked. Angela's Awesome Enchiladas are a tried and tested recipe that adds a creamy twist to this classic dish. The chicken is cooked in a combination of spices, cream, and soup to create a rich and flavorful filling. Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.In a medium saucepan over medium heat, combine the chicken, condensed chicken soup, sour cream, chili powder, and 1/2 of the taco seasoning. Heat through, and set aside.
3.In a large skillet over medium heat, melt the butter and sauté the onion until softened. Add the green chilies, remaining taco seasoning, green onions, water, lime juice, onion powder, and garlic powder. Stir in the chicken mixture, and remove from heat.
4.Spread 1/2 can of enchilada sauce in the bottom of a 9x13 inch baking dish. Spoon chicken mixture into each tortilla, roll, and place seam side down in the dish. Pour the remaining enchilada sauce over the tortillas, and sprinkle with 2 cups of Cheddar cheese.
5.Bake for 30 minutes in the preheated oven. Sprinkle with remaining cheese and olives. Bake for an additional 10 to 15 minutes, or until cheese is melted and bubbly.
